CHEESECAKE

Serves 4    30 min.    445 kcal

1 cup cream cheese
1/2 cup unsalted butter
1/2 cup powdered sugar
1 egg
1 Thsp. Iemon juice
2 Thsp. milk
l/3 cup cake flour (hakurikiko) (30g)
1 tsp. baking powder
4 tsp. cocoa powder
9-in. round baking pan

1 . Oil pan's bottom and sides. Soften butter and cream cheese.
2. In a blender, mix butter, cream cheese and powdered sugar.
3. Beat the egg and add it to (2) in 2 steps, mixing 10-20 seconds each time. Then add lemon juice and milk, mix again.
4. Sift cake flour and baking powder together. Add to (3), mix.
5. Pour 2/3 of (4) into a bowl. Add cocoa to the other 1/3, mix.
6. Pour mixture with no cocoa into pan first, and pour cocoa mlxture over, diagonally, for a marbleing effect. Bake about 20 minutes at 400'F(200'C).
