COLD SHABU-SHABU FOR SUMMER

Serves 4   30 min.   274 kcal

1 Ib. pork (picnic shoulder)
4 sliced thin 8-in. cucumbers
1 clove garlic
5 Tbsp. soy sauce,
1 Tbsp. sesame oil

1. Cut cucumbers in half crosswise and slice each half thin lengthwise.
2. Soak cucumbers in ice water.
3. Boil pork I minute, then plunge into a separate bowl of ice water and set in a colander to drain.
4. Mince or press garlic. For the sauce, combine and mix garlic with soy sauce and sesame oil.
5. Drain cucumbers, transfer to a plate.
6. Drain boiled pork and place it on top of the cucumbers. Pour the sauce from (4) over.
