This is a dish of burdock roots and sesame with dressing.

Burdock root is very tough and strong, so this is considered to be a food which brings good luck. In the Kansai district, it replaces kuromame as one of the mitsuzakana.

Ingredients (serves four)
Burdock root 300g
Soy sauce 2 tbls
Sugar 1 tbls
White sesame seeds 3 tbls
1. Cut burdock roots into 3 cm strips, and soak them in water.

2. Boil them with vinegar and water. 3. Dress them with sugar, vinegar, soy sauce and sesame seeds.
